PEANUT BUTTER COOKIES

These scummy soft cookies are super quick and easy to make, great to share with friends over a cuppa and a catch up! They are also packed with fibre and protein so will help satisfy those hunger pangs.

INGREDIENTS


200g Peanut Butter (the no added sugar variety)


80g honey


1 egg


1/4 tsp bicardbonate of soda


50g oats


50g chopped dark choc (70-80%)


40 g chopped walnuts


METHOD


Preheat the oven to 170 degrees


Mix the peanut butter and honey in a bowl


Add the egg and bicarb of soda and mix well


Finally mix in the oats, chocolate and walnuts


Spoon into 10 equal sized dollops on a baking tray lined with greeseproof paper


Bake for approx 8-10 mins (depending on if you like a little goo in the middle)!




MAKE IT YOUR OWN


Change the chopped walnuts for peacans or almonds

Swap the chocolate for dried fruit

Try with almond butter or cashew butter
