Veggie Tomato Pasta
This simple veggie dish packs a delicious tomato punch, a great choice for a nutritious week night supper.

INGREDIENTS
150g pasta
300g passata or chopped tomatoes
200g cannellini beans
100ml veggie stock
1 red onion
1 tbsp tomatoe puree
3 cloves garlic
1 tsp sugar
2 tsp mixed herbs
2 tsp paprika spice
1 fresh chili (if you like spice)
1 tsp olive oil
Salt and pepper
1spoon natural yoghurt to serve
METHOD
Chop the onion, garlic and chilli
Heat oil in a sauce pan over a medium heat, add the onion and cook until softened
Add the garlic and chili and allow to sizzle for a few minutes
Reduce heat to low, add the smoked paprika & stir for a few minutes
Add the passata, puree, stock, beans, mixed herbs, and sugar
Simmer for around 20 mins (until the sauce has thickened, and the beans are softened)
Meanwhile put the pasta on to cook
Season to taste and serve with a dollop of natural yoghurt

Make it meaty by adding chorizo, bacon lardons or chicken
Feeling the need for cheese? Pop the sauce and pasta in the oven topped with grated cheese and bake for 15 mins until crispy
Add extra greens by wilting spinach into the sauce just before serving
